做法:春笋切成(chéng )片后加(jiā )少(shǎo )许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开后(hòu )转(zhuǎn )中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
