做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切(qiē )片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
