做法:春(chūn )笋切成片后加少许盐捞出(chū )后用(yòng )清(qīng )水浸泡(pào ),生(shēng )姜切片,葱切(qiē )成(chéng )段。锅烧热,倒(dǎo )入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
