做法:春笋切成片后加少许盐(yán )捞(lāo )出后用清(qīng )水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻(fān )炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅(guō )盖焖。
