做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒(chǎo )1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春(chūn )笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候加入(rù )盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
