做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩(yǎn )住(zhù )春笋(sǔn ),盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
