做法:春笋切成片后(hòu )加少许(xǔ )盐捞出(chū )后(hòu )用清水(shuǐ )浸泡,生(shēng )姜切(qiē )片(piàn ),葱(cōng )切成(chéng )段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
