做法:春笋切成片后加少许盐(yán )捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片(piàn )、葱段翻(fān )炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩(yǎn )住春(chūn )笋,盖上锅(guō )盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖焖。
