做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收(shōu )汁时(shí )盖(gài )上锅盖焖。
